Black Bean and Apricot Salad

Ingredients


1 - 15 oz can black beans, rinsed and drained

1/2 cup dried apricots, diced

1/2 cup yellow or red bell pepper, diced

2 green onions, thinly sliced

1/4 cup chopped fresh cilantro

1 clove garlic, minced

1/4 cup apricot nectar

2 Tbsp oil

2 Tbsp seasoned rice wine vinegar

1 tsp soy sauce

1 tsp fresh ginger, grated (if you need to use dry - 1/2 tsp)

4-6 oz fresh baby spinach, roughly chopped

Method


  1. Mix together beans, apricots, peppers, green onions and cilantro in medium bowl with lid.

  2. In a small bowl, whisk together garlic, apricot nectar, oil, vinegar, soy sauce and ginger.

  3. Pour over the bean mixture and toss to make sure everything is coated. Cover and refrigerate for at least 2 hours or overnight.

  4. When ready to serve, toss with the spinach.
