Lentil Soup

Ingredients


1 Tbsp olive oil

1 medium onion, diced

1 carrot, diced

2 cloves garlic

1 tsp ginger paste (or 1/2 tsp dried ground ginger)

1 tsp ground turmeric

1/2 ground cumin

1/2 tsp smoked paprika

6 cups turkey or chicken stock (homemade is really the best)

1 cup dried red lentils

1 potato, finely diced

Zest and juice of a lemon (optional, but it really brightens the flavor)

salt and pepper

Method


  1. Heat olive oil over medium low heat in a large saucepan (or small soup pot). Add in onions, carrots and garlic. Cook for about 5 minutes until soft.

  2. Increase heat to medium and add garlic and ginger. Saute while stirring until onions are starting to get some color.

  3. Add the turmeric, cumin and paprika and cook for another minutes.

  4. Add stock, lentils and potato. Once it comes to a boil, lower the heat to a simmer and cook for about 20 minutes. You want the lentils and potatoes to be falling apart.

  5. Adjust texture/thickness by adding more stock or water (or coconut milk if you have it on hand). Salt and pepper to taste.
