Thai Crunch Salad

Peanut Dressing Ingredients

1/4 cup peanut butter

2 Tbsp seasoned rice wine vinegar

Juice and zest from 1 lime (or 2 Tbsp bottled lime juice)

3 Tbsp vegetable oil

1 Tbsp soy sauce or tamari

2 Tbsp honey

2 garlic cloves (2 tsp garlic paste)

2 tsp ginger paste

1/2 tsp salt

1/2 tsp red pepper flakes (ssamjang if you have it)

Method

Combine all ingredients in a blender and process until smooth. If dressing is too thick (you want it pourable but thick) add a little water.

Salad Ingredients

2 bags slaw mix (if you can find the asian slaw mix use one regular and one asian)

1 cup shredded carrots

1 red bell pepper, large dice

3 oz snow peas, cut into bite size pieces

5-6 oz cooked and shelled edamame (I buy the frozed bagged ones and just thaw)

2 green onions, thinly sliced

1 bunch cilantro, chopped

Method

Combine all ingredients in a very large bowl. Add the dressing and toss well when you are ready to serve. This gets a little soggy once dressed so only dress as much as you want to eat.
