Mom’s Oatmeal Cake
Ingredients
Cake
1 1/2 cup boiling water
1 cup quick cooking oatmeal
1/2 cup butter (room temp)
1 cup dark brown sugar
1 cup sugar
2 eggs
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
Topping
1/4 cup brown sugar
1/2 cup sugar
1 cup flaked coconut
1 cup chopped pecans
6 Tbsp butter
1/4 cup milk
1/2 tsp vanilla
Method
- In small bowl, combine oatmeal and boiling water - stir and set aside. 
- Preheat oven to 350 degrees. Grease a 9x13 baking pan. 
- In another bowl, mix together flour, baking soda, spices and salt. 
- In large mixing bowl, cream butter and sugars. Beat in eggs and cooled oatmeal. 
- Add in dry ingredients and mix just until combined. 
- Pour batter into prepared pan. Bake for 30-35 minutes, until cake springs back when lightly touched. 
- While cake is baking, combine all the topping ingredients except vanilla in a medium saucepan. Heat until butter is melted and everything is very bubbly. Take off heat and add in vanilla and stir. 
- As soon as the cake is done, spread the top with the topping. 
- Set oven to broil. Put the cake back in the oven and watch carefully. You want it very toasted brown but if a few are a little darker, I think it taste perfect.
