Corn and Cabbage Slaw

Ingredients


3 ears of corn, grilled and cut off the cob

3 poblano peppers, grilled til charred, peeled, deseeded and diced

2 bags of shredded cabbage mix for slaw (I used one purple cabbage and one that was cabbage and carrots)

1/4 cup (or more) chopped Cilantro

1/2 tsp garlic powder

1 tsp ground cumin

1/3 cup lime juice

1/4 cup seasoned rice wine vinegar

1/4 cup mayonaise

1/4 cup sour cream

salt and pepper to taste

Method


  1. Prepare corn and poblanos

  2. Mix with cabbage and cilantro.

  3. In a separate bowl, whisk together remaining ingredients.

  4. Pour over vegetables and check if more salt and pepper is needed.

  5. Let mingle at last 30 minutes before serving but it is better a day later.
