Corn and Cabbage Slaw
Ingredients
3 ears of corn, grilled and cut off the cob
3 poblano peppers, grilled til charred, peeled, deseeded and diced
2 bags of shredded cabbage mix for slaw (I used one purple cabbage and one that was cabbage and carrots)
1/4 cup (or more) chopped Cilantro
1/2 tsp garlic powder
1 tsp ground cumin
1/3 cup lime juice
1/4 cup seasoned rice wine vinegar
1/4 cup mayonaise
1/4 cup sour cream
salt and pepper to taste
Method
Prepare corn and poblanos
Mix with cabbage and cilantro.
In a separate bowl, whisk together remaining ingredients.
Pour over vegetables and check if more salt and pepper is needed.
Let mingle at last 30 minutes before serving but it is better a day later.
